Key Responsibilities
- Develop innovative bakery and dessert concepts aligned with market trends and customer needs
- Create, test, and refine recipes with focus on taste, texture, stability, and shelf life
- Conduct laboratory trials, pilot runs, and support factory scale-up before product launch
- Optimize existing products for quality, cost efficiency, and production feasibility
- Prepare and maintain recipes, technical specifications, and development documentation
- Collaborate with Production, Quality, Engineering, and Supply Chain teams during development
- Translate customer briefs into clear development plans, samples, and timelines
- Source and evaluate ingredients and suppliers based on performance, quality, and compliance
- Ensure products meet food safety, quality, and regulatory standards
- Monitor industry trends, competitor products, and new technologies in bakery and desserts
Qualifications & Skills
- Diploma or Degree in Bakery & Pâtisserie Arts, Culinary Arts, Food Science, or related field
- 3–5 years’ experience in bakery or pâtisserie R&D, preferably in a commercial or factory environment
- Strong knowledge of bakery formulations, ingredients, and production processes
- Hands-on experience with product trials, pilot testing, and scale-up
- Understanding of functional ingredients and food additives
- Creative mindset with strong problem-solving and ownership skills
- Able to work cross-functionally with clear communication and time management skills
